This French wine (VDF, meaning wine without regional information) is made from 80% Malbec and 20% Cabernet Franc. It is certified organic by ECOCERT SAS FF32600.
Terroir: Toucheronde's first hillside faces due south. The soil is composed of siliceous pebbles rich in various pebbles (flint, steps, sponges, etc.), ensuring a rapid warming environment.
Harvest: Manual. Once in the cellar, the grapes are destemmed and carefully placed in barrels.
Vinification: For the benefit of rich and concentrated material, fermentation in large barrels is long (35 to 40 days), with daily punching down at the start of fermentation, at a temperature controlled between 25 and 28°C. After malolactic fermentation, long aging of 18 to 24 months in large barrels.
