在以前的日本山形县,当地人和登山者习惯于用野生山葡萄制成饮料并习惯饮用,声称它具有强身健体、贫血和恢复疲劳的功效。月山葡萄酒山葡萄研究所于1979年开始以日本的野生葡萄来酿酒。这款酒主要采用鹤冈市朝日地区133户合约农户栽种的野生赤霞珠酿造。这种葡萄是山梨大学的山川祥秀于1990年创造的。这种葡萄浆果小,紫黑色,丛生中等。味道微酸,但含糖量高,比一般欧洲葡萄酒品种更适合日本气候,不开裂,抗病虫害,产量稳定。野生葡萄的野味和清爽的酸度,以及赤霞珠优雅醇厚的香气,使其成为适合酿酒的品种。从1997年左右开始,月山葡萄酒主要在朝日地区种植野生赤霞珠葡萄。它的特点是含糖量高,色泽鲜艳,酸度爽脆。
For generations, locals and mountaineers in Yamagata Prefecture, Japan, have cherished wild mountain grapes for their purported health benefits. Inspired by this tradition, Tsukiyama Wine Wild Grape Research Institute embarked on a journey to craft fine wines from these wild grapes in 1979.
Their signature wine is primarily made from wild Cabernet Sauvignon grapes cultivated by 133 contracted farmers in Tsuruoka City's Asahi region. This unique grape variety, developed by Yoshio Yamakawa of Yamanashi University in 1990, is well-suited to Japan's climate. Its small, purple-black berries, slightly acidic yet high in sugar, offer a remarkable balance.
Tsukiyama Wine has been cultivating wild Cabernet Sauvignon grapes primarily in the Asahi region since around 1997. The resulting wine is characterized by its high sugar content, vibrant color, and refreshingly crisp acidity.
