月山葡萄酒山葡萄研究所于1979年开始,以日本的野生葡萄来酿酒,这款酒就是该所第一款原创性十足的日本野生葡萄酒。这款酒使用野生葡萄和赤霞珠的杂交品种的野生赤霞珠酿制,并储存在日本前所未有的隧道式地窖中,在大自然的摇篮中陈酿而成。这种葡萄是山梨大学的山川祥秀于1990年创造的。从1997年左右开始,月山葡萄酒主要在朝日地区种植野生赤霞珠葡萄。它的特点是含糖量高,色泽鲜艳,酸度爽脆。
